Happy Valentine's Day! I have to say, this day is one of my favorite holidays of the year. It's just a fun day to be romantic, happy, loving and well... fun! Today we are going to finish making Valentine treats for Caroline's preschool and I am going to get started on my special dinner for my man tonight. Since it is virtually impossible to get a reservation anywhere on Valentine's Day in Charlotte, the plan is to get the children in bed around 7--a whole hour early--so Mr. Graham and I can have a private, noise-free, romantic dinner by candlelight and be serenaded by none other than Michael Buble! Yes, romance will be in the air!!
On the menu this evening, we will enjoy:
-a fresh wedge of lettuce with scattered bleu cheese and fresh bacon crumbles
-Beef Wellington with a side of homemade scallopped potatoes
And for dessert? A homemade, from scratch, 3-layer Devil's Food Cake with a rich, chocolate icing. No boxed cake mix in my kitchen (for tonight anyway!). I will leave you with a plate of Roy's favorite treat of all time: sugar cookies with icing. I made him a whole batch to celebrate the day!

Just kidding - poor Willie - not sure what we are doing! Roy said this morning that you were making Beef Wellington for him tonight - I told him I wouldn't even know how to begin to make that - I know it will be wonderful being the chef that you are!
OK. Since everyone is saying yummy to the cookies and dinner and cutie to the kiddos, I'll be the obnoxious, redneck commenter and say, "WHOA. Eaaaassssy, Carol. That's your bro. This ain't life in West Virginia!!!!" Sorry, couldn't resist. :)
Donna, you are the BOMB!!! You will have to share your recipe for Beef W and the sugar cookies as well. I made a Rachel Ray recipe tonight that is basically Beef W substitued with chicken and the seasonings are a little different. Was really good!
Anyway, your kids are so cute! I am amazed at how much hair they have. RA looks like a little man. So precious! (Poor things are being slung in bed an hour early even though they won't be tired at all - Poor things!) LOL!
Well, it's 9:00...I wonder where Roy and Donna are??? Let's hope the Beef Wellington didn't cause any gastric problems (if you know what I mean). Wouldn't want anything to get in the way (including wide awake children) of a wonderful Valentine's night!!

Caroline was OUT at 7. She was exhausted after having no nap yesterday. Roy read her a book and he said he didn't even get to the middle of it:)
The BW was DELISH and so were the potatoes. The cake? Sorry, Denise, but it was AWESOME!!!!!!!!
Now Donna, you say you went to bed at 9:45...did you actually go to sleep at 9:45? Or did you maybe watch TV, read a book, somethin-something, etc.
Actually, come to think of it, I don't think I really want to know! :)
