Just in time for T'giving--another good recipe!!

I've never been a sweet potato fan. I have always passed on the sweet potato casserole, even if there were marshmallows on top. All of that changed last Thanksgiving when I put a bite of Roy's mom's version of the recipe into my mouth. This casserole is so good, it's almost like a dessert. Make it for Thursday's dinner and enjoy!



Jane's Sweet Potato Casserole

3 Cups Mashed Sweet Potatoes (you can used canned, too)
1 Cup White Sugar
3 Eggs, slightly beaten
1/2 Cup Milk
1/2 Stick Margarine
1 T vanilla

Combine all the above ingredients and pour into 9x13 pan.


Topping
1 Cup Chopped Pecans
1/2 Cup Flour
1/2 tsp Baking Powder
1/2 Stick Margarine
1/4 tsp. Salt
1 Cup Brown Sugar
1/8 tsp. Baking Soda

Mix all the above and sprinkle over sweet potato mixture. Bake at 350 for 30-45 minutes.

Donna- You are so right. This recipe is delicious. I remember you made it for the gang last year. I think that was the time that Hannah and I had just found out we were pregnant, maybe?
You gave me the recipe soon after and I made this last year for our SS class party. It was a hit and it will be a most repeted recipe this year. Yummy!

Yes! I've had Jane's casserole before. Maybe you made it once? Not sure how I had it but it's a MUST at Thanksgiving time. Thanks for the recipe and it does taste more like desert than a side dish.

Don Don, How many servings is this?

I don't know. It makes a 9x13 casserole size, so it will feed a family. If you're making it for a big crowd, I'd make two.
