Fall Time Treat!

I think the energy fairy paid me a visit last night because I woke up this morning ready to get some work done! I spent the entire morning deep-cleaning Caroline and Roy Austin's bathroom and then their bedrooms and playroom. I wanted to keep going but I knew I better stop or else I'd regret it later tonight with pain in my hips, back and feet. I'm only slightly feeling it, so that's good! Caroline was very good and played right beside me and helped me clean up the playroom. I even cleaned the baby car seat and stroller and took the covers off to wash. They literally look brand new again!

So, tonight I had a little taste for a good Fall time treat. I instantly thought of caramel corn and remembered how I used to make it for Roy in college when we were dating. He loved it and it was a hit on his dorm hall, too:) He comes home late tonight from Boone, so I thought I'd surprise him and treat myself while I was at it! Our little crumbsnatcher, Caroline, is liking it, too. She'll take a piece and put it in her mouth and run right back to get more! Here is the recipe if you are in the mood for a delicious, addicting snack:

Caramel Corn
3 Tbsp. oil
2/3 Cup popcorn
Cook this before starting the caramel. Pour oil into a big pot and heat up. Drop one or two kernels into the pot and wait for them to pop, then pour in the rest of the popcorn.
1 Cup Butter
2 Cups Brown Sugar
1/2 Cup Light Corn Syrup
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
Melt butter and add sugar and syrup. Boil, stirring constantly. Reduce heat and boil, stirring constantly for 5 more minutes. Remove from heat and add baking soda, salt and vanilla. Pour over popcorn (in a large baking dish) and bake for 45 minutes at 250. Stir every 15 minutes to make sure each piece of popcorn is coated. Lay out of wax paper for 10 minutes and then put in ziplock bags or container.

Our cabin we've been building went under contract so he has been up there since Fri. night cleaning it and finishing up some stuff.

Yum, Carmel corn. I am making this, this week for sure! I made the best baked apples ever last week when I had the urge for some fall food.

Donna, I am lol. The title of your post and the first line made me thing of SNL----I don't know why. I instantly thought of the skit with the two ladies on the radio/talk show, that say "Good times" over and over about everything they talk about. Funny! Caramel corn sounds yummy, CC--get it? (inside joke)

The title does sound like that "good times" skit on SNL.

Donna, I can't believe you are due in 10 DAYS!!!!! I'm so excited for you since I know you are ready to have little Roy Boy. I can't wait to see how handsome he is. I love you and will see you soon!
